About this ebook

Potatoes as a main course?

That's right, The Ultimate Potato Book moves the versatile potato to the center of every meal. To prove the premise, the authors organize recipes from A to Z, showing cooks how America's favorite side dish anchors satisfying dinners.

The volume sorts spuds into six practical market types, from baking Russets to waxy red-skinned potatoes and sweet potatoes. Weinstein and Scarbrough draw on global cuisines with Colombian chicken ajiaco, British bangers and mash, and fragrant curries.

Practical kitchen advice covers essential gear like potato ricers while showing how natural starches thicken hearty stews.

Bruce Weinstein and Mark Scarbrough offer up main course classics such as Shepherd's Pie, Cod Cakes, and Chili Fries, along with some surprising new ideas -- Lasagna (potatoes replace the noodles), Enchiladas, and Twice-Baked Potatoes with bacon, asparagus, and Cheddar.

  • One-Pot Dinners: Simmer complete meals like Portuguese steamed mussels, Spanish chorizo tapas, and slow-simmered beef brisket without dirtying extra pans.
  • Vegetarian Meals: Transform produce into satisfying centerpieces with aromatic aloo mutar gobi, broccoli-and-onion knishes, and hearty vegetable chili.
  • Party Appetizers: Feed gatherings with Argentinean beef empanadas rolled in potato dough, tabletop raclette, and crispy potato-coated shrimp balls.
  • Baking and Desserts: Turn spuds into sweet treats like cinnamon-pecan coffee cake made with yeast potato dough, fruit-filled blintzes, and sweet potato hot cakes.
  • Also by This Author: The Ultimate Ice Cream Book, The Ultimate Candy Book and The Ultimate Muffin Book.

are underrated as a contributor to health. For those with thyroid problems, potatoes (and bananas) help (according to on doctor/author). For those with high stomach acid, a raw potato will sooth your stomach. Anyways, good for you on concentrating on a potato cookbook. Potatoes should always remain a main course if a meal.
